This is what I like about Co-op delivery, I am forced to learn to cook things I would otherwise not buy. And forced to eat it NOW, because there will be more in 7 days. So this week's line-up

Also due to the large quantity of herbs that I have been having trouble using before they wilt I am learning to dry herbs. I hope it works.

I will happily take extra cilantro. The first year I thought we had too much. Then I learned to make chimichurri. Now we never have enough. Basil OTH - I still have frozen pesto from 2 years ago.

Beet soup is one of my favorite comfort foods. When I normally have it, sour cream (or heavy whipping cream) is added to it last minute (right before you puree the beets in the blender). As far as I am concerned, this goes well with scallions, garlic, rosemary, and thyme. And, you can boil the beets in chicken stock (for more seasoning). Tasty stuff.
